Holyrood Distillery releases final cask offer to its members

Holyrood Distillery is offering members of the public the chance to buy a cask of whisky for the last time.
From Wednesday 26 June, two expressions will be available from the urban distillery. Holyrood Distillery has been producing liquid since 2019 with all previous cask ranges sold out. These final casks have been specially selected by Distillery Manager, Calum Rae, to showcase the full range of the malts used in the past at Holyrood.
As the first single malt distillery in almost 100 years to sit in the heart of Edinburgh, Holyrood Distillery is dedicated to producing spirits that are truly worthy of Scotland’s capital city and its proud past as a centre of brewing and distilling. The boundary-pushing distillery is unconstrained by tradition and focuses on adventurous exploratory methods of production with a technically simple but exceptionally eclectic range of raw materials.
Speaking about the final cask programme, Calum Rae said:
“This is the final chance to be part of our cask programme journey. We’ve created two new recipes to complement our existing portfolio.
“Recipe one takes our Golden Promise heritage malt and combines it with Highland peated malt. For fermentation, we have used a combination of MG+, our classic distilling yeast, and Tropicale Yeast, a brewing strain. All of these elements combine to produce a malt-forward spirit, boasting a velvety texture, notes of barbecued pineapple and citrus before finishing with a subtle wisp of smoke.
“Recipe two uses traditional Pot Still malt in conjunction with two specialty malts; Cara and Chocolate. We have used our staple distilling yeast MG+ and also one of our favourites, Edinburgh Ale Yeast. This is a deliciously sweet and sticky spirit, with strong biscuity notes, as well as toffee and caramel with hints of fresh coffee, stone fruit and melon.
Earlier this month Holyrood Distillery won Gold for Embra and Silver for Elizabeth Yard Sherry Cask at the International Wine and Spirits Competition (IWSC), the world’s largest spirits awards.
Founded in 2019, Holyrood Distillery is dedicated to producing spirits that are truly worthy of Scotland’s capital city and its proud past as a centre of brewing and distilling.
In October 2023, the urban distillery launched its inaugural single malt, Arrival, one of the first single malt whiskies produced in Edinburgh in a century.

Tomintoul Distillery Tour
Planet Whiskies had a fantastic trip up to the Speyside Whisky region of Scotland in February 2024 to visit Angus Dundee Distillers Tomintoul Distillery within the Cairngorms National Park.
