Non chill filtered and natural colour, bottled at cask strength (56.0% ABV) yielding only 273 bottles by Halcyon Spirits.Distilled: 10/04/2007, Bottled: 29/08/2024. NOSEExceedingly smooth on the nose. The smoky bacon notes smooth and temper to soft peat smoke over time. There is briny salt with sweet heather honey and slight florals that hold the smoke in check, giving great balance. Vanilla oak from the cask mingle and balance the bouquet, so everything is beautifully integrated. TASTEVigour from the alcohol and casking give an initial burst of pepperiness, along with spicy ginger along with peat smoke. This is again tempered with honeyed sweetness, dark chocolate, cocoa and fresh ground coffee. The sweetness and saltiness balanced elegantly along with the peat and spice gives a beautifully integrated malt. FINISHMedium to long finish with the maritime freshness cutting through. The sweetness and vanilla notes mix with the coffee, cocoa and chocolate and give the finish a linger. Then to the end the oak gives the mouth tobacco leaf dryness. "
