Bushmills, County Antrim: Bushmills Irish Whiskey, the world’s oldest licensed whiskey distillery, has just unveiled two rare additions to its collection of aged single malts – the exquisite 25-Year-Old Single Malt and 30-Year-Old Single Malt.

The 25-Year-Old was matured between four to six years in ex sherry and Bourbon casks, and then spent up to 21 years in Ruby Port casks, resulting in layers of intense, dark fruit flavours, luxurious honey sweetness and gently toasted wood. Meanwhile, the 30-Year-Old was matured for 14 years in ex sherry and Bourbon casks and finished in Pedro Ximénez sherry casks for 16 years, creating a sublime whiskey characterised by deep, signature sherry aromas and enticing fig, raisin and praline richness.

The new single malts represent some of the oldest and rarest small batch whiskeys the distillery has ever shared with the public. Bushmills is backed by 400 years of expertise but is known for deftly marrying tradition with innovation. With its latest luxury releases, the distillery is satisfying the growing demand for premium Irish whiskeys and particularly aged single malts, while bringing generations of knowledge back to life with every sip.

The Bushmills 25-Year-Old and 30-Year-Old Single Malts were distilled, matured and bottled at The Old Bushmills Distillery, using water drawn from the River Bush and which has for centuries flowed over the same beds of basalt rock that form the legendary Giant’s Causeway. The new releases lie leagues beyond the minimum maturation period for aged whiskeys and join Bushmills’ collection alongside the award-winning 10-Year-Old, 16-Year-Old and 21-Year-Old Single Malts.

For each of these rare whiskeys, the majority of the flavours are influenced by the cask they’re matured in, and Bushmills have been obsessed with pursuing perfection in seasoned oak since 1608. Holding a triple-distilled spirit of exceptional smoothness – the alchemy between cask and nature is where innovation and expertise come together to create a legendary whiskey.

When we started planning these two whiskeys over 30 years ago, we travelled across Europe to hand-select each cask and collaborate with winemakers to specify the fortified wine recipe used to season them. We still engage in every detail of the process – from exceptional finishes to the perfect ageing environment. We’re proud of the generations of experience that go into ensuring every cask is at its freshest and most flavourful for maturing our whiskeys.”

Tasting notes for Bushmills 25 Year Old Single Malt

Colour: Red gold.
Nose: Rich and complex. Intense ripe hedgerow dark fruit aromas mingled with honey and gentle toasted wood offer the first glimmer of the age of this well-rounded whiskey.
Taste: Sweet almond tones followed by caramelised cherries, plums and blackberries delight the taste buds before developing into rich dark chocolate mingled with sweet spices and finishing with honey and damson – simply luxurious.
Finish: The remarkable ever present warm oak, port sweetness and gentle spice continues to flourish long after the last drop has glided down inviting you to taste this exquisite single malt again and again.
ABV: 46% ABV non chill-filtered.

Tasting notes for Bushmills 30 Year Old Single Malt

Colour: Dark rich gold.
Nose: Rich inviting sweet aromas of raisins, figs, prunes, and dates entwined with treacle toffee, soft clove and sweet spice delighted the senses.
Taste: Exquisite, velvety and smooth mouth feel. Sweet hints of dates, raisings and figs followed by praline and orange peel before developing into vanilla and warm pastry notes. A truly delightful experience for the palate.
Finish: Long complex finish that reminds you of the amazing number of years this whiskey has spent gaining its individual character. The dried fruit and toffee sweet notes are left lingering. The elegance and refinement of this exquisite single is enticing and demands a second sip. ABV: 46% ABV non chill-filtered.
